Sorrie i've been away. Trying to get back on this page and rem what got me started and who i was at the very beginning.

The chapters in between? Shall remain locked up and cherished deep in my heart, never be opened till the day sun shines thru it again.

No Sunday Sunshine

Woke up this morning and it was raining. Lovely.
Except i was home, on a sunday morning.
Slept at 10.30pm on saturday nite and for once in the past 3 mths, i had a full (powered) 8.5hrs beauty sleep. Eyes opened at 7am (the usual weekday snooze time) and heart was feeling really sore.

Sunday mornings have been awoke in Ravi's arms.
This morning, no Ravi, no sunday morning runs and no sunday breakfast together.

Was looking thru my iphone for all the sunday brekkies we had so far. Dun think i hv the time to upload all. But for the ones worth mentioning in this food blog, i would pick one of my favorites we've had so far - Lor Mee :)

This was my first time trying the long-time, old-famed Lor Mee Stall at Bukit Purmei --

It was gooey, savoury, tinge of vinegar sour, totally shiokshiok. 
Very loving, when your love one queued a long time for it. We were lucky, only waited for 25mins. Iphones kept us both occupied in the wait.
The following sunday, we intended to go Amoy for fish porridge actually (which we did in later weeks) but we changed our minds and had Lor Mee instead again.

I didn't like it. Overcooked noodles. Nothin special abt the Lor. Bukit Purmei's had a special concoction to it, of sorts.
Superlong queue as well but the team (of aunties & 1 uncle) synchronized their cooking production to even tempo rhythm. Fast ordering, food fast out.
It was edible but i wouldn't queue nor travel all the way down for it. Maybe standard dropped. As we always like to reason.
After Yuan Chun Lor Mee, we went for some sinful fried bite snacks. Fried fish intestines. Ahhh.. some weird stuff only the chinese like us appreciate =p

I love sunday breakfast times with Ravi.
And i will miss them so very much.

Aspiring Bakers #9 Swiss Rolling Good Times (July 2011) - Most Entries Contributor and Lucky Random Contributor =)

Hello Everyone!
It's me again, pardon me for the long wait in announcing the 2 Swiss roll contributors who will be receiving the gifts i've set out to giveaway at the beginning of the Aspiring Bakers #9 event! Needed to final count/triple-check the entries which was confirmed to be 165 entries (on the 3Aug'11) and was gathering some feedback from the contributors if they would be keen to meet up for a Swiss Roll party!! (bake one of the recipes shared in the 165 entries - let's meet up and sample our bakes, share some tips/ideas or simply your experience while doing it!) If you're keen to join us or know more of the details (date is not confirmed but we can always try to accommodate everyone's schedule by planning ahead/ venue most likely Botanic Gardens - bring your own flask of English Tea!!), do drop me an email at obsessedfoodie@gmail.com =)

I had much fun hosting this and i learnt i could do better, as a baker, as a blogger amidst a really challenging month of July (when my personal life was kinda in a topple). I shan't deviate from our baking topic here and the (food) theme of this blog but as my blog represents and archives the preceding chapters of my life... I would like to pen a lil note to myself here, as perhaps when i read back in months to come, i would just smile & not feel that much as i feel right now. -- The art of tango requires 2 to dance, the building of a house requires much trials and patience. If there was a blueprint, it would hv been much easier but most times, i'm not sure if easy is not the best way in achieving wat's best & precious for 2. The essense of union lies not in what you receive but what you can give, and what you can give that is appropriate and needed. Giving in itself holds no meaning if it doesn't mean anything to the receiver or if it's not wat the receiver value. We meet and cross the paths of thousands everyday. What makes a stranger become a friend, or a companion another day, is the unexplainable feeling, that silly thing, not forgetting the misery & hurt and everythin else that adds together, the irony of your choice that you wanna hang on to someone, even if it seems so wrong, you know you just want to do the right thing that sings the tune to your heart and not what you see that is crossed out on the chart.

Troubled waters doesn't take me away. Beating waves tells me i need to be stronger and be calm, remain focused... becoz soon, i'll be afloat again.

I look forward to being back to the kitchen soon and redirect my energy and rediscover the passion i once had. Food. Bake. Love.

Aspiring Bakers #9 Swiss Rolling Good Times (July 2011) - Round Up

It has been a Swiss Rolling Good Month! To all who have been baking/rolling/eating swiss rolls &/or reading up on your fellow bakers' blogs, you must be waiting for this entry! 
(i must 1st admit tis entry is not quite complete/checked but i would like to post up watever content i have first and do the amendments later. In case some of you are still not asleep at midnite! i underestimated the time required to round up, sorrie!! =p i knw tis looks terribly messy now, SORRIE for being a bad host :c) 

A really BIG THANK YOU to all fellow baker bloggers for supporting July's Aspiring Bakers #9 event and also Small Small Baker(SSB) for giving me the opportunity to be the host for this month's theme. Swiss rolls are definitely not easy recipes to conquer and requires much courage to attempt. I'm proud to announce we have 165 (updated on 3Aug'11 after final check *phew) really beautiful and creative swiss roll submissions this month. (If i hv missed out your entry, pls email me!) This surpasses my expectations for when i was brainstorming for the theme, i was contemplating between an easy topic to garner more entries versus a really tough one to truly challenge our fellow bakers.

In true baking spirit, you have not failed me. I always align baking attitudes alike to how we handle matters in life.

Yam Roll by Gladys Chan
(Adapted and modified from 一定要學會的經典烘焙:戚風蛋糕&捲蛋糕's <香芋奶冻卷>)
Swiss roll:
100g fresh milk
50g mashed yam (which I omitted for a plain roll)
50g vegetable oil (omitted)
20g melted butter (increased to 35g)
20g caster sugar
1/8 tsp salt
80g top flour
80g egg yolk (approx. 4 eggs of 60g with shell)
165g egg white (approx. 4-5 eggs of 60g with shell)
40g caster sugar (reduced from 50g)
3/4 tsp lemon juice (original uses 7.5cc)
1) Beat egg yolk with sugar (I usually beat till the mixture turns a little pale in colour)
2) Add milk and gently mix till it is incorporated into the mixture
3) Add melted butter and mix again till incorporated
4) Add flour + salt and gently mix till incorporated
5) Beat egg white with lemon juice till formed bubbles
6) Add 1/3 of sugar and beat till frothy
7) Add another 1/3 of sugar and beat till soft peak
8) Add the last 1/3 of sugar and beat till almost stiff peak
9) Take 1/3 of the egg white meringue and mixed with the egg yolk mixture (add a little bit more if desire)
10) Pour the egg yolk mixture to remaining meringue and gently fold in the mixture till well incorporated (easier if used spatula)
11) Pour into 10" x 10" pan (for a thicker roll) and bake at pre-heat 170c for 18mins (oven temperature is dependent on individual oven)
12) Remove from oven and pan immediately after baked
13) Cover with cling wrap till cool
14) Put in the yam filling and roll
NB: I usually reduce the amount of oil and sugar used but my end product is not affected by the reduce every time. (test and proven for at least 5 times)
Self-created Yam filling:
150g yam
some caster sugar (I used abt 80g)
some oil (in batches of 2 tbsp each round)
2-3 pandan leaves
1) Skinned and diced the yam into cubes
2) Steam them with pandan leaves till cooked
3) Once cooked, add sugar and mash the yam (I mashed it about 80% so there will still be yam bits)
4) Add oil into the yam and mix till incorporated (I added oil last and added it by tbsp as I did not want an oily filling)
5) Depending on the thickness of the filling desire (I used abt 80g-90g for a thick filling), shaped into an oblong piece and keep in fridge (to maintain the shape for easy rolling)
NB: The sugar used in the filling is based on the sweetness of the yam.
If the yam is sweet, amount of sugar can be reduced; If the yam is not as sweet, amount of sugar can be increased.
