GreenTea Chocolate Mixed Bread for the Aspiring Bakers#8 =)

Ingredients:
230g bread flour
70g cake flour
30g sugar
200g milk
1 yolk
1/2tsp salt
20g unsalted butter
4g yeast
10g green tea powder dissolved in 10g boiling hot water
10g cocoa powder dissolved in 10g boiling water

Method:
1. Heat up milk and yolk (beating both) to temperature of 40℃.
2. Knead all ingredients together except green tea and cocoa powder.
3. Divide dough into 3 parts: 1 portion plain, 1 portion mixed with green tea, 1 portion mixed with cocoa powder. Will take awhile of kneading to mix well.
5. Prove all 3 portions of doughs separately for 30 - 40 minutes.
6. Punch air out of dough and prove for another 20 - 30 minutes.
7. Knead flatly all 3 portions into rectangular shape. Stack them up layer by layer - plain bottom, followed by greentea & cocoa. Roll along the length till the end (like rolling swiss roll).
13. Place dough into a well-greased loaf pan and cover it with a lid and prove for 50 - 60 minutes in an enclosed area eg. microwave oven. Or simply put a towel over baking tin.
14. Bake at 180℃ for 25 – 30 minutes.

  1. Woohoo! This looks yummilicious. Lee and I are thinking of getting a Zojirushi breadmaker - just measure and dump the ingredients in the order the recipes require and the machine will mix, knead and do all the good stuff to bake you a fresh loaf in about three hours!
